Baccala (cod fish) is a traditional item that is served during Christmas Eve.  Especially during the traditional 7-fish dinner (sette pesci).

Here is one of the many ways you can prepare it.

Baccala alla Marina - Cod fish Marinara

2 lbs cod steaks, about 1 inch thick
2 cups of crushed tomatoes
2 tablespoons capers
½ medium-sized onion, chopped
¼ cup green olives (pitted and chopped)
salt and pepper
2 tablespoons olive oil
1 tablespoon parsley
½ tablespoon oregano

Use a 1.5 quart casserole, and drizzle with olive oil.  Place the cod in casserole and set aside.  Saute the onion in olive oil for about 2 minutes. 

Then you want to add the tomatoes, olives, capers, parsley, salt, pepper and oregano.

Bring everything to a boil and then pour over the cod.

Bake at 350 degrees (F) for 25-30 minutes or until the fish flakes when pierced with fork and is tender.

Ways to cook this:  You can cook on top of a stove or in dutch oven.
