Asparagus Italian-style Here is a simple recipe to prepare for asparagus, a popular Italian item served as a side-dish This will accommodate 4 servings Ingredients you will need 1 lb fresh asparagus spears 3/4 cup chopped tomatoes 2 tablespoons chopped green onions 1/8 teaspoon dried oregano 1/8 teaspoon dried thyme 1/8 teaspoon pepper 2 teaspoons freshly grated parmesan cheese or asiago cheese To prepare: Snap off the tough ends of asparagus (the word in Italian is asparagi). Remove the scales from stalks with a knife or veggie peeler, if desired. Arrange the asparagus in a veggie steamer over boiling water. Cover and steam from 4 to 5 minutes or until crisp tender, keep warm. Combine the tomato and the remaining ingredients in a small bowl. Make sure you stir well. To serve, spoon tomato mixture over aspargus, sprinkle with cheese. |
